If you’re a barbecue lover like me, there are few places in the world that can deliver a dining experience so unforgettable that it becomes a benchmark for all future meals. On a recent trip to Dallas, Texas, I had the opportunity to visit Terry Black’s Barbecue, a bucket-list destination inspired by the glowing reviews of YouTube food vlogger Mike Chen. I can confidently say, this was the best barbecue experience of my life.
The journey to Dallas was a milestone in itself. I traveled with Fiji’s top boy band, InsideOut, on Fiji Airways’ inaugural flight to Dallas. As their manager and also Director of Brands at Resonance Media, a subsidiary of Nalawa Holdings (founded by my cousin, musician and entrepreneur Apakuki “KUKI” Nalawa), the trip was both professional and personal. While we were busy showcasing Fijian talent to the world, I made sure to carve out time to indulge in one of Texas’ greatest culinary offerings—barbecue.
A Bit of Terry Black’s History
The story of Terry Black’s Barbecue is one of resilience and dedication to craft. After graduating college in 2010, Mike Black began working at his family’s barbecue business in Lockhart, Texas. What started as a temporary job became a lifelong passion for smoking meats and connecting with customers. However, like many family businesses, internal conflicts arose, leading to a split. Mike and his immediate family decided to forge their own path, opening their first location in Austin, Texas.
Drawing inspiration from the old-school barbecue methods taught by their grandfather, the Black family focused on quality and authenticity. They cooked meats the traditional way, with passion and attention to detail, and made their sides from scratch. After overcoming numerous challenges—including legal disputes, grueling 14-hour workdays, and early critiques—Terry Black’s Barbecue was named one of the Top 50 BBQ joints in Texas by Texas Monthly in 2017. Since then, the business has expanded to Dallas, Texas, in the vibrant Deep Ellum neighborhood, where it continues to thrive.
The Feast
Stepping into Terry Black’s BBQ, the aroma of smoked meats enveloped me, setting the stage for what would be a memorable meal. The menu offered an array of mouthwatering options, and I didn’t hold back:
- Succulent Brisket: Tender and flavorful, with a perfect smoky crust that melted in my mouth.
- Fall-off-the-Bone Pork Ribs: Juicy, with just the right balance of sweetness and spice.
- Jalapeño-Stuffed Sausages: A spicy kick that paired beautifully with the smoky meats.
- Mexican Rice and Coleslaw: Light and refreshing sides that complemented the richness of the meats.
- Famous Banana Pudding: Creamy, sweet, and the perfect way to end the meal.
- Mexican Coke and a Texan Beer: Refreshing beverages that rounded out the experience.
Every bite was a testament to the Black family’s commitment to quality and tradition. The brisket alone was worth the trip, with its melt-in-your-mouth texture and smoky depth of flavor. The ribs were so tender that the meat practically fell off the bone, while the jalapeño-stuffed sausages added a bold, spicy dimension to the meal. The sides and dessert were no afterthought either; they were as carefully crafted as the meats.
